Recipe: Apple and Ginger Blondies

Apple and ginger make a gorgeous pairing at this time of year warm bright and gently spiced. These apple and ginger blondies bring together soft fruit caramel notes from brown sugar and the warmth of ginger with a little white chocolate for sweetness. They have the perfect balance of comfort and sharpness and are simple to make in a small dish or easily doubled if you want more to share.

Ingredients

For the blondies

  • 60g apple peeled and sliced plus a few round slices with the skin on for the top

  • 20g crystallised ginger chopped

  • 1/4 tsp ground ginger

  • 90g butter

  • 100g self raising flour

  • 75g white chocolate

  • 1 egg

  • 140g brown sugar

Method

  1. Preheat the oven to 160°C fan. Melt the butter gently in a pan. Remove from the heat and add the white chocolate. Leave it to melt in the residual warmth then stir until smooth and let it cool slightly.

  2. Add the chopped apple the crystallised ginger and the ground ginger to the mixture. Stir in the egg and the brown sugar then add the flour and mix briefly until combined. Pour the batter into a greased and lined baking dish.

  3. Bake for 40 to 45 minutes. The centre will still be a little soft but the blondies will firm up as they cool. Slice once set and enjoy.
