Recipe: Pumpkin Spice Pecan Cookies

Pumpkin brings a soft earthy sweetness to baking and pairs beautifully with warm spices and nuts. These pumpkin spice pecan cookies are tender and lightly cakey almost like a small whoopie pie with a gentle Autumn warmth in every bite. They are simple to make and lovely with a flask of tea on a cool day.

Ingredients

  • 50g pumpkin purée

  • 60g butter

  • 75g soft brown sugar

  • 1 tsp cinnamon

  • 1/4 tsp cardamom

  • 125g self raising flour

  • 75g pecan nuts chopped

  • 4 tbsp milk

Method

  1. Cream the butter and sugar until light and fluffy. Add the pumpkin purée and the spices then pour in the milk. Add the flour and mix briefly until a soft dough forms. Fold in the chopped pecans. Chill the dough in the fridge for about 30 minutes to firm up.

  2. Preheat the oven to 160°C fan. Divide the dough into teaspoon sized balls and place them evenly spaced on a lined baking tray. These cookies do not spread much as they bake. Bake for 12 to 15 minutes until lightly golden. Leave to cool on the trays.
